Hospitality has always been built on great service and memorable food. Behind every hotel restaurant, buffet, banquet, and catering event is a string of decisions about how much to prepare, when to restock, and how to keep guests happy without overproducing. For decades, those calls have relied on experience and instinct built up over years of running busy kitchens.
That expertise still matters, but the job has gotten harder. Food costs swing, labor is tight, guest volumes shift with little warning, and operators face growing pressure to cut waste while protecting margins. Experience alone is no longer enough. Experiences take time to gain and experience does not guarantee the desired outcome if the data input for decisions is inaccurate. What kitchens need now is something hospitality has never really had: real-time visibility into what is happening in the back of the house.
Food Waste Prevention Week runs September 28 to October 4, 2026. The observance is moving to the fall this year to align with the United Nations’ International Day of Awareness of Food Loss and Waste, and it is a fitting moment to look at why so much food still ends up in the trash across hotel kitchens, and why the fix has less to do with willpower and more to do with data.
Over the past thirty years, hospitality has adopted technology that transformed reservations, pricing, and guest engagement. The kitchen has largely been left out of that shift. Operators know what food they buy and what ends up discarded, but they know very little about what happens in between: how much of a buffet pan actually gets eaten, which dishes run out early, and which ones sit untouched until they are thrown away.
Food waste gets treated as a disposal problem. It is really an information problem. Kitchens make hundreds of production calls every shift without knowing exactly what guests are eating or how much food is left before the next batch goes out. Without that information, teams default to producing more than they need, because running out was never acceptable.
Food and beverage drives roughly 25 to 30 percent of a full-service hotel’s total revenue, according to AHLA’s 2025 State of the Industry report, and it carries heavy food and labor costs to match. Yet many production decisions still rest on manual counts, spreadsheets, or reports that surface weeks later. Hotels have poured money into front-of-house technology while the kitchen remains one of the least digitized parts of the operation.
The numbers make the case. The United Nations Environment Programme puts global food waste at close to 19 percent of food available to consumers, with hospitality and foodservice contributing heavily through overproduction, buffets, and spoilage. ReFED estimates that prevention measures alone could unlock close to 620 million dollars in profit potential for restaurants each year. This is not only a sustainability story. It is one of hospitality’s biggest openings to improve performance and profit together.
What is missing is a clear picture of what actually happens before and during service, not just what was planned. Which dishes are guests eating? How does demand shift through a meal period? How much food is really left on the line, and when should production adjust?
Answer those questions in real time, and a chef can hold back the next batch of salmon instead of finding out at 9pm that half the pan went in the trash. That is the real shift: not a smarter report the next week on what was spotted in the kitchen disposal, but the ability to adjust what gets prepared and how much, in time during the service and for the next cycle. Do that consistently and forecasting improves on its own, meal after meal.
Across thousands of meal periods, one pattern holds up: kitchens rarely have a talent problem. They have an information gap. Culinary teams already know how to cook and serve well. What is missing is real-time data on what guests are actually eating.
That gap shows up in unexpected places. Some of the most overproduced items are not premium ingredients. They are everyday staples like rice, potatoes, eggs, grilled proteins, and salad bar components. Small forecasting misses on these high-volume items add up fast.
The hotels making the most progress are not just tracking how much they throw away. They are building on that feedback loop for sharper menus, better forecasts, less unnecessary prep, and stronger sustainability numbers, all without asking guests to accept less abundance or variety.
The next wave of hospitality technology will not replace chefs or operators. Guests will always depend on people who understand them better than any system can. What changes is that those teams will make decisions backed by real, current data about their own kitchen rather than estimates built on last season’s patterns. Hospitality already transformed how it manages reservations and pricing. Food Waste Prevention Week is a fitting moment to start doing the same for the kitchen.
